This Weekend…

Lot’s of fun things happened this weekend! Some of these actually might have been last weekend, so we’ll call this This Weekend’ish? Yes? Good!

I tried the delicious new Pom drink, they added pineapple to their pomegranate juice and a hula skirt, how cute is that?! Roxy went to the groomer and then my honey put her in our blanket basket, these are the shenanigans that go on in our household. I got some nautical socks, and our koozie collection increased 200%. We didn’t have any and now we have 2 really cool ones! Also, I revived these gorgeous Dahlias! They were sitting there all sad and dead in a pot, so I replanted them to our flower bed and they are doing SO well! I made a delicious quick asparagus side that was almost too pretty to eat (almost) and we spent some time at the shore!

What to Pack for a Weekend Getaway!

This summer my honey and I have been king and queen of the weekend getaway. It’s a nice way to see someplace new over the summer, and really experience everything the East Coast has to offer! But how do you pack for a weekend getaway?! What if it’s chilly in the evening? Or wayyyy too hot during the day? What if you end up somewhere very fancy, or only have heels to wear to a beach bar? This actually happened to me, which is why I only travel with wedges and flats now, you don’t have to tell me twice! 

I have already done my guide to snappy packing, which covered a lot of the items I would carry on to a plane, but a weekend trip is different! Here are my tips for packing for a weekend getaway!

Depending on the locale, I will pick out the colors and patterns appropriately. For Newport, RI, I wanted everything to be preppy and nautical, but not so different from my usual style. I added a few colorful and patterned buttons downs and some bright pants to my usual neutral tees and metallic sandals and I was set. 

For the trip to Ocean City, MD, I wanted to pack the brightest items I owned! I also wanted to incorporate some items I had picked up during July sale season and I knew I wanted to bring pretty much every pair of sunnies I own. I offset this by packing only 4 pairs of shoes. For 4 days. Priorities man! I packed up some of my great recent finds, and some tried and true staple pieces and laid out everything in advance to see how it all worked. I really did try not to over pack too much. I only had a few items leftover that I didn’t wear, so I was happy!

What I packed bright and new: A patterned pair of shorts were a must (from J. Crew); A camo sweatshirt for looking fab and staying warm; Sunnies, sunnies and more sunnies! My new black oens from kate spade are my fave! A neon pink quilted bag with coordinating pom pom sandals, so very fun and comfy; My floppy hat, and a fun bow belt; Big, glittery baubles and jewels and bright lip glosses. Last, but not least, my neon yellow dress from J. Crew.

What I packed tried and true: A pair of basic white shorts; Basic tees in white and gray and tanks in a pale purple and a white with a muted pattern; A comfy black sweatshirt for colder weather; A chic cross-body bag in the brightest yellow I could find and equally bright yellow sandals- these 2 are a summer staple for me! My go-to coordinating color belts: bright yellow, mint, hot pink. (I am not a basic black girl at all!) Swimsuits that coordinate, but are mis-matched, and some cover up shorts and dresses; My favorite cozy sweatpants, and eyelet sleepy shorts. Metallic gold wedges, a maxi dress and a hot pink sweater, perfect for the chilly nighttime activities we did. Like mini-golfing and eating ice cream ha!

Chambray Three Ways with eShakti

Road Trip UT–>AZ

Time for a Road Trip- back into time actually. We took this trip 2 years ago, but just found most of the photos on my honey’s SD card. They are just too fabulous not to share! I think I found my new blog photographer!!

Park City, UT

No regrets, that’s my motto. That and everybody Wang Chung tonight.” – Out Cold

We started out the trip snowboarding in lovely Park City, UT. There is so much to do in this quaint little skiing town! We dined at some awesome restaurants, and celebrated St. Patty’s Day at the entertaining local bars. We stayed in a lovely apartment with a fireplace, and snuggled up after long days on the slopes. On our last day, we decided to rent some skis. As usual, my honey was instantly good, after 10+ years of not skiing. I, on the other hand, ended up on my butt. I had a smile on my face the entire time though, and haven’t given up on it yet. My advice: take a lesson before you head right out there!

Arches & Canyonlands National Parks, UT

“Good luck exploring the infinite abyss” – Garden State

We rented a car in Park City and set out for Arizona, making a few stops along the way. First was Arches National Park, where we took some amazing photos! Of course my honey needed to climb on top of the enormous arched rock- standing in front wasn’t enough for him. He pushed me to my limit, convincing me to stand on the edge of one of the amazing cavernous abysses of Canyonlands, and I couldn’t be happier that he did.

Monument Valley, UT/AZ

“I’m pretty tired… I think I’ll go home now.” Forrest Gump 

Next we drove the long road through the middle of nowhere. Well, not exactly nowhere, through Monument Valley. Now I know why a lot of movies use this as a backdrop, it’s absolutely breathtaking. It was an amazing experience just to drive down this road, and really made me appreciate how amazing our country is. The natural beauty is so raw and untouched in areas like this. It really was an amazing experience- I recommend a road trip out west to anyone who can find the time to do it!

Grand Canyon, AZ

Ellen Griswold: I honestly don’t think you’re going to find the Grand Canyon on this road.
Clark: Jesus, it’s only the biggest damn hole in the world.
Aunt Edna: Clark, watch your language!
Clark: Make that the second biggest.

I find myself wanting to say that each leg of the trip was my favorite, but I think this takes the cake. They don’t call it the Grand Canyon after all. My breath was literally taken away, it is just spectacular. Standing on the edge of this natural wonder, you feel like you can take on the world. It really was an amazing experience for my honey and I to have at such a new stage in our relationship. It really set the stage for the excitement and wonder to come. It was also my first time there, and even though honey-pie had been there before, his eyes glistened with pride at being the one to take me there for the first time. The drive throughout the park is also pretty amazing. The trees are so dense and lush, and it’s fun trying to spot wildlife as you go!

Sedona, AZ

Sedona was my second favorite part of the trip. It is spectacular, the colors of the mountains are something that is hard to comprehend. Mother Nature has the best paint palette! There is so much to do here also, I wished we had stayed longer! We found an amazing hotel with a gorgeous room, right in town, and ate at their restaurant. They had a special running, so we shared a bottle of wine for $20! We played pool and backgammon and cards and stumbled back to our room, what a fun night! The next day we had lunch next to the airport overlooking all of Sedona. We kept seeing helicopter rides take off, but no one was taking the bright red bi-plane. Of course we had to do it! We strapped on our Snoopy helmets and goggles, and boarded for a tour of the town. How cute did we look?! I was so nervous the entire flight, since you’re out in the open, but my honey made me feel safer. I’m sure he really enjoyed the ride with me clutching to him.

If I could do it all over again I would spend more time at the Grand Canyon, maybe take a hiking or helicopter tour. I would certainly extend my stay in Sedona by about a week, ha! I might not even come back next time. Snapizona anyone? πŸ™‚

So far, I have noticed a difference in my skin tone and glow, and I’m interested to see how my collagen and wrinkles are effected as I continue to use the product! It may just be my mind playing tricks on me, but the sun spots on my forehead are already vanishing!

I use the serum in the morning and evening, after washing my face and prior to applying my moisturizer. The directions specify to lightly shake the product before using, and I did notice a slight separation the time I did not shake. This is because the natural ingredients in the product may separate. Think of it like a salad dressing! Speaking of food, I must mention the scent again, it puts me in such a good mood at either time of day!

20 Minute Easy and Fresh Summertime Supper

Today’s recipe is sure to please- it can’t get much easier than this, and with all the fresh veggies, you’ll feel good about yourself too! It is a pasta dish, in a garlicky, slightly buttery light sauce flavored with thyme that really lets the sweetness of the vegetables stand out. I’ll call it “That” Pasta, since that’s what my honey asks for when he would like me to make it.

We adapted this recipe from something I saw in a healthy cooking magazine. I’ve made it a little bit differently each time, since I lost the recipe immediately upon making it. Figures. Sometimes I forget the cheese, and sometimes I add in only green zucchini and no squash. Sometimes I royally mess up cutting the corn off the cob, more on that below. Sometimes I aim to make double the recipe and accidentally make quadruple.

The point is, this recipe is really easy, adaptable, and comes out deeeelicious every time you make it, even if you promptly lose this recipe. But try it like this for once just to see if you like it!

“That” Pasta
What you’ll need:
1/2 box of Linguini
2-4 tablespoons of olive oil
3/4 cup chicken broth
2-3 pads of butter
Small palm full of dried thyme
3 cloves garlic, minced
2 ears of corn, cooked and removed from cob, steps below
1/2 pint of cherry tomatoes
1 zucchini, sliced lengthwise (cut the zucchini in half first if it is on the longer side)
1 yellow squash, sliced lengthwise (cut the squash in half first if it is on the longer side)
3 tablespoons of feta cheese
salt and papper to taste

What you’ll do:
1. Place a large frying pan on medium heat and, when warm, add in olive oil. 2-3 minutes later add in your garlic. This will infuse the olive oil with delicious garlicky goodness. Keep an eye on it, you don’t want to burn it. 1-2 minutes later add in your zucchini and squash. Cook for 10-15 minutes or until tender.

Snap Tip:
*You may need to do this in 2 batches if you don’t have a large enough frying pan, which I have absolutely done. I’ve done it in 2 large frying pans, like a circus act.

2. Set water on to boil water. While that is heating up, add in salt, pepper and thyme to veggies, all to taste (go easy with the thyme at first if it’s not something you’re familiar with, it’s a really great flavor though, I’m sure you’ll love it!).

3. Add the cherry tomatoes to the frying pan. Also, add your corn pieces. If you had the veggies in 2 separate pans, now is the time to combine them all to one. Add in the butter and chicken broth and let that all simmer together. Your kitchen should be smelling divine right about now. Turn the heat to low while you wait for your pasta to finish. Note: I leave my cherry tomatoes whole and they usually melt down nicely int he pan, but you can halve them if you like a smaller bite of tomato.

4. Cook pasta to package directions, usually takes about 7 minutes for pasta to be al dente once the water is boiling. Drain the pasta, reserving a little bit of pasta water. Add the pasta in with the veggies, along with the pasta water, which will add a little thickness to the “sauce.” Toss to combine.

Snap Tip:
*Sometimes I don’t have the amount of sauce that I like in the pan, so I add a little more chicken broth. Keep in mind that if you do that, you need to add in flavor too, with more salt, pepper, thyme and butter.

5. Pour entire pan into a large bowl to serve. Top with feta cheese and a little more thyme for color. I serve additional feta cheese on the side for those who want to add more (me).

6. Enjoy!

How the heck did you get such large luscious chunks of corn off of the cob?! 

Practice, my friend, practice. I told you, I make this recipe a lot! And trial and error. I’ve messed up tons of time and gotten itty bitty pieces of corn, which are fine, but the big chunks are so much easier to pick up with your fork to take in as one big bite with the pasta. I also actually asked someone on a food blog once too. And looked it up on Pinterest of course! Here is what I learned!

Microwave the corn either in the husk or in a damp paper towel, 3 minutes for one ear, 2-4 minutes for each additional ear (according to WikiHow). Take it out and put it on a plate or pan and pop it in the freezer, so its cool enough to handle.

While that’s cooling for 5-10 minutes, take out a large bowl and a smaller bowl. Place the smaller one up-side-down inside the larger bowl, like the pic above. You’ve just made a corn pedestal!

Take the corn out of the freezer, remove the husk or paper towel and place it on it’s pedestal. Take a sharp knife and cut down the length of the corn, hacking off bits of delicious nibbles as you go. The closer you get to the cob the better, take your time, don’t chop your finger off.

It may take some practice and trial and error, but once you get it, you will have nice luscious chunks of corn for this and any other recipe!

Books I’m Reading- August ’14

Land of Love and Drowning: A Novel

I just finished this book, the final in the All Souls Trilogy, which I recommended in my #top5 Trilogies post, and it was a great end to a fun and whimsical witchy romance series!


You Should Have Known– this one really drew me in at first, and then became so predictable- it’s great chick lit, and will make for a good beach read, but it’s not one I recommend highly.

The Vacationers– this is a perfectly good novel, and a fun beach read, set in paradise- what more could you ask for on your summer reading list?!

Coast Road– this one reminded me of “The Descendants,” which is a fantastic George Clooney movie, set in Hawaii, how much more perfect for summer can you get?! Oh where was I? Yes, the book, it’s like the movie, except in reverse? Sorta?  It’s worth a read, and def watch the movie when you are finished πŸ™‚

The Maze Runner– I didn’t get to read the Maze Runner yet, the final installment in the All Souls Trilogy snuck up on me (where was my Amazon alert when I needed it?!) But I fully intent to get to it this month, hence shrinking down my list.
