Red, White and Blue Smoothie

We’re coming upon one of my favorite summer holiday weekends: 4th of July! I love to be outside, soaking up the sun and eating the fresh summer fruits that are everywhere this time of year! I also love love love to have a fresh summer smoothie for breakfast or lunch this time of year. As if reading my mind, CVS reached out to me to introduce me to the new CVS Brand nutrition products that recently hit store shelves. CVS is absolutely one of my favorite stores, so I was really excited to collaborate with them!

They sent over 3 items:

·         Vegan Protein Smoothie packets in mixed berry, chocolate, and vanilla

·         Organic black chia seeds

·         Coconut oil

These products can be used on their own, or to create delicious and healthy smoothies to power you after a workout, or help you through the afternoon slump! I’ve been a fan of coconut oil for as long as I can remember now, and I’ve made several smoothies with chia seeds before, so I was super excited to try these products from CVS!

I just had to make a smoothie, and figured that red, white and blue would fit the theme of this weekend perfectly! The red component is the strawberries, the blue the blueberries and the white the coconut oil! Yumm!! AND this smoothie will give you a nice energy boost and keep you fuller longer with the spinach and chia seeds! Here’s how I made it!

Red, White and Blue Smoothie

1/2 cup coconut milk
juice of 1 grapefruit
1/4 cup fresh blueberries
1/4 cup frozen banana
1/3 cup frozen strawberries
1-2 hand fulls fresh spinach
1 tbsp coconut oil
1 tbsp chia seeds
ice cubes as needed

1. Add all ingredients to the blender. Start with your lowest setting (my blender has 3 settings) and blend until a nice cyclone begins to form. Move up to your middle setting and then highest setting. You may need to add more almond milk depending on how the protein packet is incorporating.
2. Blend for 2-3 minutes until smooth.
3. If your smoothie stops cycloning, stop blending, let the smoothie “burp,” and begin again with the lowest setting.
